Have you looked at the YJ's?
I have a '95 yj and also a '97 tj and there is alot more leg and belly room (my wife is 8 months pregnant )and still has plenty of room in the yj.

YJ - mid 80's to mid 90's wrangler.
TJ - 1997 to present wrangler.
I'm 6'5", 250lbs and I don't really find alot of extra room.
I have removed my passenger seat ('97 wrangler), it was no biggie. From what I have read (I don't have alot of practical experience), you can remove the seat with the base and redo the floor mounts. I think there are certain safety considerations when doing this ( mine had a torx bolt wherever a seatbelt was mounted) but if you build up the floor stronger than the original position you should be ok.
I think that you would just need a large enough plate under the floor.
The hardest part would probably be the plate. access may be an issue.
Hope this helps.

The YJ's have square headlights. They also don't have driver or passanger airbags so the dash is more flat. I think you do get more leg room. But thats only my opinion, since I do switch back and forth from a YJ to a TJ daily depending on if I want to drive and auto or manual. You should drive both wranglers and see what fits for you.
