I have looked all over the internet and cannot find anything on how difficult it is to swap a AMC 360 for a AMC 283 in my CJ7.  Questions such as engine mount location come to mind.  Any input would be appreciated.  

If your looking to swap out an I-6 258(?) for a V-8 360, it is a simple and easy swap. One engine mount needs to be replaced (passenger side I believe), and it bolts right up. Don't even need an adapter for the transmission, it's the same bolt pattern.
