I recently put a 360 in my CJ7. I have an Edelbrock intake and 650 Performer Series Carb. The carb bolted right on and runs good but needs some fine tuning. I connected a dwell meter and could not get an changes by adjusting the air and fuel unless i turned them the whole way in, then the jeep would stall. Also I turned the idle down and if I set it below about 750 or 800 it stalls when I put it in gear. It doesnt run bad but seems a little rich, plus i get 7mpg. I think the motor may have a beefed up cam. Any thoughts?

Not sure what you mean by dwell meter. A dwell meter is used to adjust the points. Do you have points? You would want to use a vacuum gauge to set the carb screws.
If you want to crispen up the off-idle response, advance the timing a little. Then take it for a drive. If it pings, retard the timing slightly. The stock timing won't be advanced enough for your setup.

that sounds good. my father in law hooked up a dwell meter to the coil and grounded to the battery. i think he knows what he's doing but i could be wrong. i have never advanced timing before, i will have to look into it. thanks for the info.

Setting the timing is really just a trial and error process. A timing light can help, so you know where your at, but finding where it needs to be is trial and error. The stock timing is for the stock manifold/cam/carb. Usually a little advanced works best with the Edelbrock Performer package.
I'd put the carb screws back to their factory setting and go from there.
Dwell is the angle in degresss that the points are closed. If you don't have points, don't be concerned with dwell.
