I've been talking to a few wheelers up here in Anchorage and they swear by tire chaining. For mud and snow they say tire chains can make even a stocker wheel with the best of them. Just wondering if anyone else has heard that? I can see it in the snow but mud?

Chains are great. And they do make a huge difference in both mud and snow.
They can be a bit of a hassle and they will break, especially in mud. They break when they hit rocks burried below the surface of the mud. They are not subjected to rocks when used on the hi way.
If you run them, get the bar reinforced type. They can be a real bummer when they break and they can take out more than just the paint job, namely, brake lines.

Yeh be VERY careful using them in mud, I have had them break on me in the snow, and like ftgiles said, lost a brake line and did some serious damage to the tire well and paint around it.
